Summer Pea, Watermelon & Quinoa Salad
1 cup quinoa (cooked per packet instructions)
1 cup sugar snap peas
1 cup watermelon, cubed
1 cup fresh flat-leaf parsley, roughly chopped
Pinch of salt and pepper
Method
- Cook quinoa to packet instructions and leave aside to cool
- Blanch sugar snap peas
- Combine quinoa, sugar snap peas, parsley and watermelon in a large bowl
- Add salt and black pepper and toss gently to serve.
